Join the Leland team for a unique night of preserving, pickling and fermentation in the Demo Kitchen by Ace Hotel Brooklyn.
Leland brings together their talented culinary team to present a one-night-only “Preservation, Pickling & Fermentation” class and tasting at Ace Hotel Brooklyn.
All proceeds will be donated to City Harvest, New York City’s first food rescue organization, rescuing high-quality food that would otherwise go to waste and delivering it for free to New Yorkers experiencing food insecurity.
We will demo and taste through the following four items:
How to make tonic through maceration – featuring gin + tonics
How fermentation works in baking – featuring Leland sourdough & fermented butter
How to pickle vegetables – featuring ramp kimchi
How to preserve meats – featuring Leland 100-day dry-aged coppa

Leland butchers its meats and fish from nose-to-tail, pickles and ferments in-house and bakes bread.
