Friends, St. JOHN is coming to New York, decamping to the kitchens and tables of As You Are at Brooklyn’s Ace Hotel for one glorious night.
There will be skewers of duck hearts to plunge into “emotional” aioli, setting the tone for the feast ahead, and cheeky bites of lobster and caviar expressing sheer exuberant joy. The iconic Roast Bone Marrow and Parsley Salad will appear as heaving platters of proud megaliths, Pig’s Cheeks are roasted resting on trenchers of bread and then, when all is crisp and saturated in porcine goodness, torn and tossed through sweet, jammy shallots and springy green beans. Whole Halibuts will swim in a rich and unctuous clam-studded trotter sauce.
Senses will be re-awakened with crumbling slabs of Mrs. Kirkham’s Lancashire Cheese and rounds of Raisin Bread, readying you for the final delight: the perfect Strawberry Ice Cream and those melting clouds of warm Madeleines.
The Fergroni — Fergus’ “Negroni as it should be” — will greet you on arrival, a special wine and cocktail list curated for the occasion by Trevor himself will accompany your dinner and, because you know how St. JOHN loves a party, the bar will remain open to allow the chefs to let down their hair. There is even talk of a martini fountain, courtesy of our friends at Ford’s Gin.
